Almond Flour Cookie Dough Bites (Gluten-Free, Dairy-Free, Refined Sugar-Free)

Ingredients:

  • 1 cup almond flour

  • 3 tbsp nut butter

  • 2 tbsp maple syrup or raw honey

  • 1 tsp vanilla extract

  • 1–2 tbsp water (as needed for texture)

  • Pinch of sea salt

  • 3 tbsp mini dark chocolate chips

Optional add-ins:

  • 1 tbsp Zen Basil Seeds

  • 1 scoop collagen or protein powder (adjust liquid as needed)

  • 1 tbsp chocolate chips with 1 tsp coconut oil drizzle

Instructions:

  1. Mix the wet ingredients:
    In a bowl, stir together almond butter, maple syrup, vanilla, and 1 tbsp of almond milk until smooth.

  2. Add dry ingredients:
    Add almond flour and a pinch of sea salt. Mix well until a soft dough forms. If it’s too dry, add another splash of almond milk.

  3. Fold in chocolate chips.

  4. Roll into bites:
    Use a spoon or cookie scoop to form 10–12 bite-sized balls.

  5. Melt chocolate and coconut oil

    Drizzle chocolate over each bite and sprinkle salt on top

  6. Chill:
    Place in the fridge for 20–30 minutes to firm up.

  7. Store:
    Keep in an airtight container in the fridge for up to 1 week or freezer for 1 month.
